We set one standard when we began experimenting with making wine jellies in the Plum Daisy Kitchen. They must remain absolutely true to their “mother” wines. The wine jellies must not only taste like wine, but they must taste just like the varietal wines — the Cabernets, Chardonnays, Merlots — from which they are made. The process that we developed enables us to capture all the individual characteristics of the original wines in every jar of wine jelly.
